Ham, Cheddar & Egg Bagel
The best part of waking up just might be this breakfast sandwich.
Ingredients
- 1/2 pound Fischer’s Sliced Ham
- 4 bagels of your choice
- 4 large eggs
- 3/4 cup shredded gruyere cheese
- 1 cup baby spinach
- 1 tbsp butter
- 1/4 cup mayonnaise
- 1 tbsp Dijon mustard
- salt and pepper
Directions
- Mix the mayonnaise and Dijon mustard in a bowl.
- Heat butter in a nonstick pan. Whisk eggs in a separate bowl and season with salt and pepper. Add eggs to pan and use a rubber spatula to gently move eggs around the pan as they cook. Once almost cooked, sprinkle cheese on top of eggs to melt it.
- Set eggs aside and add ham slices to pan to warm them. Remove from heat.
- Build sandwiches by spreading a small amount of mayo mixture on one bagel half for each sandwich. Top with spinach, ham, and cheese-topped eggs. Place remaining bagel halves on top and serve.
