Irish Pea Soup
This gorgeous green soup garnished with Fischer’s bacon is just the ticket to transport your taste buds.
Ingredients
- 2 strips Fischer’s Bacon, cooked and crumbled
- 1/2 cup ham, diced
- 1 potato, diced
- 1 cup split peas
- 1 onion, diced
- 1 carrot, chopped
- 1 stalk of celery, chopped
- 1-1/2 cup chicken stock
- 1/2 cup half and half
- 1 sprig fresh thyme
- 1 bay leaf
- salt and pepper to taste
Directions
Grease a large pan. Add onion, carrots, and celery to the pan and cook until onion is soft- about 3-4 minutes.
Add the bacon crumbles and chicken stock.
Add the peas, potato, thyme and bay leaf. Bring to a boil. Turn down the heat and cover. Simmer for 1 hour.
Remove thyme and bay leaf. Use a food processor to process the soup until desired texture.
Return soup to the pot and add half and half and ham. Turn the heat up just to reheat the soup. Add salt and pepper.
Ladle into bowls and serve.
