Bacon, Egg & Avocado Salad
Ingredients
- 4 slices Fischer’s Bacon
- 8 hard-boiled eggs, chopped
- 2 avocados, chopped
- 1/4 cup fresh chives, chopped
- 2 tbsp. olive oil
- 2 tbsp. fresh lemon juice
- 1 tbsp. mayonnaise
- salt and black pepper
- spring greens
Directions
- Cook the bacon in a large skillet over medium-high heat, turning once, until browned, 6 to 8 minutes; crumble.
- Mix together oil, lemon juice, mayonnaise and salt and black pepper to create the dressing.
- Assemble salad by topping spring greens with bacon, eggs, avocado and dressing. Top with fresh chives.
