Bacon-Stuffed Mushrooms
Impressive as an appetizer, filling enough to be a main entree!
Ingredients
- 8 strips Fischer’s Bacon
- 1 medium onion, diced
- 1 pound whole fresh mushrooms, stems removed
- 1 package (8 oz.) cream cheese, softened
- 1/4 cup grated Parmesan
- 1/4 tsp garlic powder
Directions
- Preheat oven to 400 degrees F. Cover rimmed baking sheet with aluminum foil.
- In a pan, fry bacon until crisp. Cut into small pieces. Add onion to the pan with the remaining bacon grease and cook over medium heat, stirring often until onions are caramelized. About 8-10 minutes.
- Mix cream cheese and garlic powder. Stir in bacon and onion.
- Place mushrooms on the baking sheet, upside down. Fill each one with the cream cheese mixture.
- Bake until the mushrooms are tender, around 25-35 minutes. Top with Parmesan and put back in the oven to allow the cheese to melt. Remove from oven. Garnish with chopped green onion, chives or parsley, if desired. Serve.
